Favorite Breakfast at Kaufman's-Dutch Baby Pancake

Look at the name: Dutch baby Pancake. How can't you adore it? After all, everybody adores real babies.

We fell in love with this breakfast the first time we had it. Ever since, we cook it frequently in the weekend mornings.

Dutch baby pancake recipe

Before starting, preheat the oven to 400F and put a 9" baking dish (eg pie dish or cast iron skillet) on a rack placed at the lower 1/3 position. Add 1 Tbsp of butter into the pan while it is being preheated in the oven.
Ingredients for wet mix:
3 eggs
1 tbsp sugar
1 cup milk (or soy or rice milk)
1 tsp vanilla extract
Simply mix them in a small bowl with a fork.

Ingredients for dry mix:
1 cup flour
1 tbsp sugar
1 tsp ground cinnamon
1/8 tsp salt
Mix all the dry ingredients in a big bowl.

1. Pour the wet mix into the dry mix. Whisk to mix, but not over beaten.

2. Take the preheated pan with butter out of the oven, and pour the batter into it.

3. Bake 21-23 minutes, the pancake will grow tall while baking. Watch in amazement!
4. Turn off the oven. Leave the pancake in there for another 2 minutes with the door ajar, this is to prevent the pancake from collapsing.

Done!

Perfect weekend breakfast:

Of course, our baby loves it too!
